Besan laddu is a awesome Indian sweet that's basically made from chickpea flour (we call it besan), sugar, ghee (clarified butter), and some yummy flavorings like cardamom and nuts. What is Besan Laddu?

Besan is a flour made from ground chickpeas. You take dried chickpeas, grind them up, and bam, you've got besan. It's kind of like all-purpose flour but with a nutty taste. People use it a lot in Indian cooking for things like pakoras, laddus, and even savory dishes like dhokla. Plus, it's got some good stuff like protein and fiber. So, it's not just tasty, it's kinda healthy too!
Gram flour is different from chickpea flour that is made with dried white chickpeas. Both have different taste and texture.
There are too many laddu varieties,but besan laddu is most popular in every laddu varities.

The process of making besan laddu involves roasting besan in ghee until it achieves a golden color and releases a nutty aroma. After cooling, sugar is added to the besan, and the mixture is shaped into small, round laddus. Optional additions include cardamom powder for fragrance and chopped nuts for crunch. Besan laddus are often made during festive occasions, celebrations, or as a sweet treat for special moments. The winter season is particularly popular for preparing besan laddus, as the cool weather complements the warmth of the spices and the richness of the ghee.

All you need is a pan, a spatula, and a sweet tooth. Oh, and a good playlist – cooking is way more fun with music!

Cost:

Besan, sugar, ghee, and some optional nuts – it's not gonna break the bank. Unless you decide to go all fancy and use gold-plated almonds, you should be good.



Ingredients
  • 2 cup Chickpea flour(Besan)
  • 1/2 cup Ghee
  • 1 cup Sugar/Sugar Powder
  • Chopped Nuts(cashews,Almonds)
  • Cardamom Powder
Instructions
  1. Add Ghee
    • Heat a heavy-bottomed pan or kadai on low to medium heat.
    • Add Ghee in the Pan or kadhai.
  2. Add Besan

    Add 2 cup besan into ghee and start roasting. Keep the flame low to prevent burning.

  3. Roast Besan and ghee

    Roast besan mixture continuously.The besan will turn golden brown and emit a nutty fragrance. This takes about 15-20 minutes.

  4. Start Brownish

    After 10-12 min Below you see ,the besan and Ghee starts changing there colour into brown 

  5. Lumps

    Stir Continuosly and remembereds stir it until lumps will not left over in mixture it turn into soft texture.

  6. Keep Roasting

    Keep on Roasting the mixture for approx 15  mintues continuosly until it get brown and thick.stir it non stopply.

    Note
    Remberber, if you cant Stir it will start burning from bottom and start smelling so you have continuosly roasting.

  7. Roast until thickThe mixture will be thicken and the color of mixture is also change. Turnoff the Stove and keep Panor Kadhai aside.
  8. Add Sugar Powder(Boora)

    Add 1 cup powdered sugar or boora and stir well so that no lumps are formed.. Adjust the amount based on your sweetness preference.

  9. Cool mixture

    Left mixture aside for 5-6 minutes until it get little cool or lukewarm  to get in shape of laddu.

  10. Add Nutes

    Before shapping the laddu add some nutes (Cashew,Amonds) and mix well.you can add green cardamom powder  and raisins also.

  11. Shape laddu

    Then start shaping medium size laddu with your palm.and if the mixture is tight you can add some hot melted ghee in the mixture and mix well and then start shaping.

  12. Repeat it again

    Repeat for the remaining mixture.

  13. Let Them Set

    Allow the laddus to set for a while. They will firm up a bit, making them easier to handle.

  14. Store Laddu

    Store laddu into air tight container  if you cant store in air tight they will get thick beccause of ghee.

Note

Tips

  • Low and Slow: Roast besan on low heat for that perfect golden color and aroma.

  • Stir It Up: Keep stirring while roasting to avoid clumps and burns.

  • Cool Down: Let roasted besan cool before adding sugar; hot meets sugar is a no-go.

  • Reduce Sugar: Use a sugar substitute or reduce the amount of sugar to cut down on calories and sugar content.

  • Moderate Ghee: Cut down on ghee or use a healthier oil in moderation.

  • Nuts for Nutrition: Adding nuts not only enhances flavor but also brings healthy fats and nutrients.
