Before we begin making sambhar, we soak 50g tamarind in water earlier.for 30 minutes.
Once the tamarind gets soft, then squeeze the tamarind in the water itself.Discard the strained tamarind with the help of stainer and keep the tamarind pulp aside.

Rinse the100g arhar dal for half hour
Peel and chopped all vegetables you have available in your kitchen. Here I take Capsicum,carrot,Tomato,Beetroot, Pumpkin,bottel gourd.
Drain all water add the dal in a pressure cooker .Also add ¼ teaspoon turmeric powder ,Red chilli powder and 1 teaspoon salt
After boiling the arhar dal, we add vetable in same pressure cooker with turmeric and salt. And we also add 2 chopped Green Chilli.
we put 3-4 cup water also in it.
Cook till the vegetables are almost done. Ensure that you don’t overcook the vegetables.
Heat oil in a pan. Drop in mustard seeds and Cumin seed.
Add onion in the pan. Add asafoetida and curry leaves. Sauté until they turn golden brown.
Add tomatoes and let them become mushy. Add salt,Turmeric,Garam Masala
Before Adding Lentil and vegtable, we add tamarind water in it for tangy twist.Adjust the quantity based on your tang tolerance level
Next Add most flavourable ingredients that is our Sambhar Masala.
Combine the sambhar(combination of daal and veggie) with tadka
Allow the concoction to simmer on a low flame. This is where the magic happens. Let the flavors intertwine.
Serve sambar hot or warm. Garnish with some coriander leaves if you prefer.Serve it with steaming rice, idli, or dosa. Garnish with fresh coriander if you're feeling fancy.
